An onion based curry blend from Southeast India, Vadavan is a rich and flavorful curry blend sometimes called Vadouvan or French Curry that has recently emerged into European and American cooking.  It has a full flavor and mild heat that is a great complementary addition to our selection of Indian spice blends.

    Vadavan was new to me. I tried the chicken recipe on the container and liked it - and the following day I liked it more! The flavor is unique; it is not what I would expect in a curry, but is lighter. It has a sweet-sour tang and a little heat that warms rather than burns. I'll definitely be using this in my cooking with chicken and fish ... and who knows what else!

    We love this for seasoning curries and gravies! Even turkey gray believe it or not! My husband loves it!

    I ADORE this curry! There is a balanced fenugreek presence. I use this with rotisserie chicken seasoning for fried chicken and pork chops and it is soooooo yummy! I even use a pinch with Caribbean Jerk Seasoning from this company and lemon pepper on fish! Use this savory spice blend to fill in flavor gaps in many dishes. I love all the spices I've tried from this company! I'm so grateful they are making such delicious and organic spice blends!

    Keep up the fantastic job of making me look like a great cook without much effort!

    I ordered two round tins of the VADAVAN because Thora mentioned it in a recipe. My husband Dave used it in one of his creations and I used it in one of my soup creations. Neither of us follow recipes very closely. I got a free sample of MASSAMAN CURRY with the order and we love that too!I'll be placing a larger order the first part of November.     The Perfect Blend

    I use this on everything. It's subtle enough so that you don't get knocked down by curry (not that I mind!). I often use it in a concoction of chicken stock and coconut milk - kind of a bone broth protein drink. I've used it on fish, chicken, in rice, on vegetables and in sauces. It's not hot (though I love heat), and has a perfect balance of flavors. I just love this stuff!

    Essential for codfish

    This spice is oh so good! I put a couple of heaping tablespoons of Vadavan into a puddle of olive oil and then dredge my fillet of codfish or haddock in it. Then I add salt & pepper, bake at 425 F for ~12 min, and voila! A friend loved it so much that she bought some Vadavan too and now she does this recipe with salmon.

    I love this stuff! I make a lot of spice blends at home myself so even ordering this was a weird thing for me to do... SO glad I did! While I still do my blends for big curry batches this has become a countertop spice that I put on eggs, veggies, fishes... etc. Its so quality (which I can only get if I buy whole spices then roast and grind myself), and it is not that flat blah-curry-blah taste most curry powders have. YUM.
